Our sausages are all made at the market "fresh every week"Our hams,bacon,Smoked chops,are all smoked with real Hickory Wood and done by a local shop. Welcome to our siteOur beef is hand picked and graded from a group of young beef cattle(less then 36 months of age)Then it is dressed with a USDA inspector on site and left to age in a temperature controlled cooler for 2 weeks before we receive it at market.Our process is to trim out the roasts,steaks,etc.We then trim off the fat and trim the steaks and roasts to what you see in the meat case.Our trimmings are used to make hamburger. To make lean hamburger we add Round Meat until we have a 95-97% lean hamburger and is why it is sometimes called ground round or ground sirloin.Our ground Chuck is made from the meat from the front shoulder and trimmings( about 80-85% lean) and is what we use to make our Hamburger Patties. |
